Steps

  1. In a 6-quart slow cooker, stir together the onion, garlic, ginger, crushed tomatoes, tomato paste, all the curry spices and the salt.
  2. Add the chicken and stir until every piece is coated in sauce.
  3. Cover and cook on LOW for 4 to 5 hours (or HIGH for 2 1/2 to 3 hours), until the chicken is tender and the largest piece reads 165°F (74°C).
165°F⏱ Slow cook (LOW): 4 hr
  4. In a small bowl,
whisk (how to whisk) Whisk Beat ingredients with a whisk to mix them smoothly or to add air. 1. Use a bowl big enough to whisk without splashing; set it on a damp towel to stop it spinning.2. Hold the whisk loosely and move it in quick circles or side to side, touching the bottom.3. For lumpy mixtures, add liquid a little at a time and whisk after each.4. For sauces on the stove, keep the whisk moving across the whole bottom of the pan. Done when: The mixture is even with no lumps or streaks of egg. How to whisk: mistakes to avoid
the cream and cornstarch until no lumps remain.
  5. Stir the cream mixture into the curry. Cover and cook on HIGH until the sauce thickens.
    ⏱ Thicken (HIGH): 15 min
  6. Stir in the 1 teaspoon garam masala and the lemon juice. Taste and add salt if needed.
  7. Serve over rice or with warm naan, sprinkled with cilantro.

Tips

  • For deeper flavor, cook the onion in a little butter for 8 minutes and stir in the spices for 30 seconds before adding to the cooker.
  • Chicken breasts dry out over long cooking. If you use them, cook on LOW only 3 to 3 1/2 hours.

Storage

Estimate from USDA FoodData Central; not medical or dietary advice. Based on 17 of 17 ingredients.

How we estimate

We add up USDA FoodData Central values for each measured ingredient as written and divide by the recipe's 6 servings, so changing the servings or units here doesn't change a serving. Brands, swaps, trimming and cooking all change the real numbers.

Not counted: fresh cilantro, cooked basmati rice or naan (to taste or as needed).

Estimated cost

About $2.60 a serving

About $15.75 for the recipe as written (6 servings).

Estimate; prices vary by store and region. U.S. average prices for September 2026 from BLS Average Price Data and USDA ERS Purchase to Plate prices updated with the BLS Consumer Price Index. Priced: 6 of 17 ingredients, 97% by weight.

How we estimate

Each measured ingredient is weighed as in the nutrition estimate and priced at the U.S. average: BLS's average price where BLS publishes one, else USDA ERS's Purchase to Plate price for 2017-18 raised to September 2026 with the CPI for that food group. Whole packages, store brands, sales and regions all change the real cost: treat it as a ballpark.

  • boneless skinless chicken thighs $10.50 BLS
  • crushed tomatoes $2.60 ERS
  • heavy cream $1.85 ERS
  • onion $0.50 ERS
  • garlic $0.15 ERS
  • lemon juice $0.10 ERS

Not priced (no official average price we can match, so not in the total): fresh ginger, tomato paste, garam masala, ground cumin, paprika, ground coriander, ground turmeric, cayenne pepper, kosher salt, cornstarch.

Not counted: fresh cilantro, cooked basmati rice or naan (optional, or to taste).
