Salt and spices

Cayenne: what it is, how to pick and store it

Ground hot red chiles: plenty of heat with little other flavor.

How to pick it

Add a pinch, taste, then add more. Hot paprika or red pepper flakes can stand in.

How to store it

Keep it in a closed jar away from heat, steam and light (not above the stove). Ground spices fade with time: if it smells faint, it will taste faint, so use a little more or replace it.

Out of cayenne? What to use instead

  • Red pepper flakes: The same amount, crushed fine. Slightly milder, with visible flakes.
  • Hot sauce: A few dashes for each pinch. Adds vinegar and a little liquid.
  • Chipotle powder or hot paprika: The same amount. Chipotle is smoky; hot paprika is milder and fruitier.
