Onions, garlic, ginger and chiles

Substitutes for garlic

Fresh garlic is sharp and pungent; garlic powder is mellow and sweet. They swap well in cooked dishes.

  1. In place of fresh garlic

    Garlic powder

    How much
    ⅛ tsp for each clove
    How
Add it with the liquid or spices rather than to hot oil, where it scorches.
    What changes
Mellower and sweeter, with no bite.
    Best in
    Soups, sauces, rubs, dressings.
  2. In place of fresh garlic

    Jarred minced garlic

    How much
    ½ tsp for each clove
    What changes
Milder and slightly sour from the preserving liquid.

    Cooked dishes.
  3. In place of garlic powder

    Fresh garlic

    How much
