Heavy cream: what it is, how to pick and store it

Cream with at least 36% milkfat. It whips to stiff peaks and can be boiled into sauces without curdling.

How to pick it

Heavy cream and heavy whipping cream are the same thing; plain "whipping cream" has a little less fat and whips softer.

How to store it

Keep it cold, toward the back of the fridge. It can be frozen for cooking, though it won't whip as well after thawing.

Out of heavy cream? What to use instead

  • Half-and-half: The same amount. Thinner and less rich.
  • Milk + melted butter: ¾ cup whole milk + ¼ cup melted butter for each cup. Close in richness for cooking and baking, but it won't whip.
  • Full-fat coconut milk: The same amount. Rich and silky with a coconut taste.
  • Evaporated milk: The same amount. Lighter, with a light caramel note.
