Rice: what it is, how to pick and store it

Long-grain white rice cooks up fluffy and separate; medium and short grains are stickier; brown rice keeps its bran, so it's chewier and takes longer.

How to pick it

Use the kind the recipe names: water amounts and cooking times differ. Rinsing white rice until the water runs clearer makes it less sticky.

How to store it

Uncooked white rice keeps a long time airtight in a cool, dry cupboard; brown rice has oil in the bran and keeps better in the fridge. Spread cooked rice out to cool quickly.

  • Refrigerate cooked rice within 2 hours, and eat leftovers within 3 to 4 days. (USDA FSIS, Leftovers)
