Tomato paste: what it is, how to pick and store it

Tomatoes cooked down to a thick concentrate. Fry it in the oil for a minute or two until it darkens; it tastes deeper and less tinny.

How to pick it

Cans are cheapest; tubes keep in the fridge and let you squeeze out a tablespoon at a time.

How to store it

Move leftover paste from an opened can to a covered container in the fridge and use it within about a week, or freeze it in tablespoon dollops on parchment, then bag them.

Out of tomato paste? What to use instead

  • Tomato sauce or passata: 3 tbsp for each 1 tbsp paste. Lighter, fresher tomato flavor.
  • Ketchup: The same amount. Sweeter and vinegary; fine for a tablespoon or two.
