Black Bean Burgers · Smoky Skillet

Smoky Black Bean Burgers

A quick bake dries the beans so these patties stay firm, then a hot skillet gives them a crisp crust. Smoked paprika and cumin make them taste grilled.

Ingredients

  • Patties
  • 2 cans black beans, 15 oz each, drained and rinsed
  • 1 tbsp olive oil
    Swaps for olive oil

    Instead of olive oil

    • Avocado oil or another neutral oil: The same amount. No olive flavor; avocado oil handles higher heat.
    • Butter: The same amount. Richer and nutty when browned.
    • A neutral oil + more seasoning: The same amount. Dressings lose the fruity, peppery note; a little extra lemon, garlic or mustard makes up for it.

    More for olive oil

  • ½ medium onion, finely chopped
    Swaps for onion

    Instead of onion

    • Another onion: The same amount. Yellow is the all-rounder; white is sharper and crisper; red is milder raw and adds color; sweet onions are mildest.
    • Shallots: The same amount, chopped. Milder and sweeter, with a hint of garlic.
    • Leeks: About 1½ times as much, white and light green parts. Milder and softer when cooked.

    All 4 swaps for onion

  • ½ cup red bell pepper, finely chopped ≈ 75 g
  • 2 cloves garlic, minced
    Swaps for garlic

    Instead of garlic

    • Garlic powder: ⅛ tsp for each clove. Mellower and sweeter, with no bite.
    • Jarred minced garlic: ½ tsp for each clove. Milder and slightly sour from the preserving liquid.

    More for garlic

  • 1 tsp ground cumin
    Swaps for ground cumin

    Instead of cumin

    • Ground coriander: The same amount. Brighter and citrusy, less earthy.
    • Chili powder: Twice as much. Contains cumin, plus chile heat and garlic.
    • Caraway seeds, ground: Half as much. A related flavor, a bit sharper.

    More for cumin

  • 1 tsp smoked paprika
    Swaps for smoked paprika

    Instead of paprika

    • Sweet paprika + a pinch of chipotle or cumin: The same amount of paprika, plus a pinch. Some smokiness without the full smoked flavor; chipotle adds heat.
    • Chipotle powder: About ¼ the amount. Smoky and much hotter.

    More for paprika

  • ½ tsp chili powder
    Swaps for chili powder

    Instead of chili powder

    • Homemade blend: For 1 tbsp: 1½ tsp paprika, 1 tsp ground cumin, ¼ tsp garlic powder, ¼ tsp dried oregano, a pinch of cayenne. Close; adjust the cayenne for heat.
    • Ancho chile powder: The same amount, plus a pinch of cumin. Smokier and fruitier, mild heat.

    More for chili powder

  • ¾ cup panko
    Swaps for panko

    Instead of breadcrumbs

    • Panko and dry breadcrumbs: The same amount, either way. Panko is lighter and crunchier; fine crumbs make a denser, more even coating and a firmer binder.
    • Crushed crackers or cornflakes: The same amount. Crackers are saltier (cut other salt); cornflakes are extra crunchy and slightly sweet.
    • Rolled or quick oats: The same amount. A moist, tender binder; they don't crisp like crumbs.

    All 4 swaps for breadcrumbs

  • 1 large egg, beaten
    Swaps for egg

    Instead of eggs

    • Flax egg: 1 tbsp ground flaxseed + 3 tbsp water for each egg. Binds well but gives less lift, so bakes are a little denser and flatter, with a mild nutty taste and brown flecks.
    • Chia egg: 1 tbsp chia seeds + 3 tbsp water for each egg. Works like a flax egg: good binding, little lift, slightly denser crumb.
    • Unsweetened applesauce: ¼ cup for each egg. Moister and denser, with a soft, slightly gummy crumb if you swap more than one egg.

  • 1 tbsp soy sauce
    Swaps for soy sauce

    Instead of soy sauce

    • Tamari: The same amount. Richer and a little less salty.
    • Coconut aminos: The same amount, plus a pinch of salt. Sweeter and much less salty.

  • ½ tsp kosher salt
    Swaps for kosher salt

    Instead of salt

    • Table salt or fine sea salt: About half as much as Diamond Crystal kosher, about ¾ as much as Morton kosher. The same saltiness when measured this way.
    • Salt by weight: 1 tsp is about 6 grams of table salt, 5 grams of Morton kosher, 3 grams of Diamond Crystal kosher. The most reliable way to swap, especially in baking and brines.

    More for salt

  • To cook and serve
  • 2 tbsp vegetable oil
    Swaps for vegetable oil

    Instead of vegetable oil

    • Another neutral oil: The same amount. No difference.
    • Melted butter: The same amount. Richer, buttery flavor; cakes are a little less moist and firmer once cool.
    • Light olive oil: The same amount. "Light" olive oil tastes mild.

All 4 swaps for vegetable oil

  • 6 slices monterey jack (optional)
  • 6 hamburger buns, toasted
  • lettuce, sliced tomato, avocado, for topping

Steps

  1. Heat the oven to 325°F (165°C) and
line (how to line a pan) Line a pan Cover the bottom (and sometimes sides) of a pan with parchment or foil so food doesn't stick and lifts out easily. 1. For a sheet pan, tear parchment the size of the pan and lay it flat.2. For a round cake pan, trace the bottom on parchment, cut the circle out and press it in.3. For brownies and bars, leave two long sides hanging over to make handles (a "sling").4. A little grease under the paper holds it in place. 2. Pat the rinsed beans dry with a towel and spread them on the pan.
  3. Bake until the skins split and the beans look dry on the outside. This keeps the patties from turning mushy.
    325°F⏱ Dry beans: 15 min
  4. While the beans bake, heat the olive oil in a cast iron skillet over medium heat. Cook the onion and bell pepper until soft and any liquid is gone.
    ⏱ Cook vegetables: 6 min
  5. Add the garlic, cumin, smoked paprika and chili powder and stir until fragrant. Take the pan off the heat.
    ⏱ Spices: 1 min
  6. Put the warm beans in a bowl and mash them with a potato masher, leaving some pieces whole.
  7. Stir in the onion mixture, panko, egg, soy sauce and salt until the mixture holds together when pressed.
  8. Shape into 6 patties about 1/2 inch thick. Wet your hands if the mixture sticks.
  9. Chill the patties on a plate to firm up.
    ⏱ Chill: 10 min
  10. Wipe out the skillet. Heat the vegetable oil in it over medium heat.
  11. Cook the patties until a crisp crust forms on the bottom.
    ⏱ First side: 4 min
  12. Flip, add cheese if using, cover the pan and cook until the bottoms are crisp and the centers reach 160°F (71°C), the safe temperature for the egg in the mix.
    160°F⏱ Second side: 4 min
  13. Serve on toasted buns with your toppings.

Storage

Refrigerate cooked patties up to 4 days.

Make ahead

Freeze uncooked patties between sheets of parchment up to 3 months. Cook from frozen over medium-low heat, about 6 minutes per side, until 160°F in the center.

Cook once, eat twice: Double it (12 servings instead of 6): cook one batch and freeze the other before cooking, the way its make-ahead note says. It keeps 3 months frozen, by the make-ahead note above. Print a freezer label · More freezer meals

Estimate from USDA FoodData Central; not medical or dietary advice. Based on 14 of 14 ingredients.

How we estimate

We add up USDA FoodData Central values for each measured ingredient as written and divide by the recipe's 6 servings, so changing the servings or units here doesn't change a serving. Brands, swaps, trimming and cooking all change the real numbers.

Not counted: monterey jack (optional); lettuce, sliced tomato, avocado (to taste or as needed).

Estimated cost

About $0.95 a serving

About $5.60 for the recipe as written (6 servings).

Estimate; prices vary by store and region. U.S. average prices for September 2026 from BLS Average Price Data and USDA ERS Purchase to Plate prices updated with the BLS Consumer Price Index. Priced: 10 of 14 ingredients, 99% by weight.

How we estimate

Each measured ingredient is weighed as in the nutrition estimate and priced at the U.S. average: BLS's average price where BLS publishes one, else USDA ERS's Purchase to Plate price for 2017-18 raised to September 2026 with the CPI for that food group. Whole packages, store brands, sales and regions all change the real cost: treat it as a ballpark.

  • hamburger buns $1.60 ERS
