Olive oil: what it is, how to pick and store it

Oil pressed from olives. Extra-virgin is the most flavorful, best for dressings and finishing; "pure" or light olive oil is milder, for everyday cooking.

How to pick it

Choose dark glass or tins (light dulls the flavor) and look for a harvest or best-by date.

How to store it

Cap it tightly and keep it cool and dark, not next to the stove. Use an opened bottle within a few months for the best flavor; oil that smells like crayons has gone rancid.

Out of olive oil? What to use instead

  • Avocado oil or another neutral oil: The same amount. No olive flavor; avocado oil handles higher heat.
  • Butter: The same amount. Richer and nutty when browned.
  • A neutral oil + more seasoning: The same amount. Dressings lose the fruity, peppery note; a little extra lemon, garlic or mustard makes up for it.
