Vegetable oil: what it is, how to pick and store it

A neutral oil (often soybean or a blend) with little flavor, for baking, frying and searing at high heat.

How to pick it

Canola, sunflower, corn or any neutral oil can stand in one for one.

How to store it

Capped, in a cool, dark cupboard. Oil that smells like paint or crayons has gone rancid: throw it out.

Out of vegetable oil? What to use instead

  • Another neutral oil: The same amount. No difference.
  • Melted butter: The same amount. Richer, buttery flavor; cakes are a little less moist and firmer once cool.
  • Light olive oil: The same amount. "Light" olive oil tastes mild.
  • Unsweetened applesauce: Up to half of the oil, the same amount. Lower in fat but denser and a little gummy, and it browns faster.
