Soy sauce: what it is, how to pick and store it

A brewed sauce of soybeans and wheat: salty and savory. Low-sodium soy sauce has less salt; tamari is often made without wheat (check the label if you avoid gluten).

How to pick it

Our recipes mean regular soy sauce unless they say low-sodium; if you use low-sodium, taste and add salt at the end.

How to store it

It keeps in the cupboard, but the flavor stays fresher in the fridge once opened.

Out of soy sauce? What to use instead

  • Tamari: The same amount. Richer and a little less salty.
  • Coconut aminos: The same amount, plus a pinch of salt. Sweeter and much less salty.
