Bell peppers: what they are, how to pick and store them

Sweet peppers with no heat. Green ones are picked before they ripen and taste grassier; red, yellow and orange are riper and sweeter.

How to pick them

Firm, glossy and heavy for their size, with no soft spots or wrinkles.

Usually at their best from July to October: see bell peppers in season.

How to store them

Refrigerate whole peppers in the crisper; keep cut peppers in a covered container and use them within a few days.
