    • Tamari: The same amount. Richer and a little less salty.

  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
    Swaps for rice vinegar

    Instead of vinegar

    • Apple cider or white wine vinegar: About ¾ the amount, plus a pinch of sugar. Rice vinegar is milder and slightly sweet; seasoned rice vinegar also has sugar and salt.
    • Lemon or lime juice: The same amount. Fresh citrus flavor instead of vinegar's bite.

    More for vinegar

  • 1 tsp sesame oil
  • 1 tsp cornstarch
    Swaps for cornstarch

    Instead of cornstarch

    • All-purpose flour: 2 tbsp flour for each 1 tbsp cornstarch. Sauces turn cloudy instead of glossy and a bit heavier.
    • Arrowroot: The same amount. Very clear and glossy; can turn slimy in dairy sauces.
    • Potato starch: The same amount. Thickens fast with a clear gloss; don't boil it long.

  • 1 tbsp vegetable oil
    Swaps for vegetable oil

    Instead of vegetable oil

    • Another neutral oil: The same amount. No difference.
    • Melted butter: The same amount. Richer, buttery flavor; cakes are a little less moist and firmer once cool.
    • Light olive oil: The same amount. "Light" olive oil tastes mild.

All 4 swaps for vegetable oil

  • 1 lb green beans, trimmed and cut into 2-inch pieces
  • 1 lb ground pork
  • 4 cloves garlic, minced
    Swaps for garlic

    Instead of garlic

    • Garlic powder: ⅛ tsp for each clove. Mellower and sweeter, with no bite.
    • Jarred minced garlic: ½ tsp for each clove. Milder and slightly sour from the preserving liquid.

    More for garlic

  • 1 tbsp fresh ginger, grated
    Swaps for fresh ginger

    Instead of ginger

    • Ground ginger: ¼ tsp ground for each 1 tbsp grated fresh. Warmer and less bright, with no zing.
    • Ginger paste (jar or tube): The same amount. Close; slightly salty or sour from preservatives.

    More for ginger

  • ½ tsp red pepper flakes (optional)
    Swaps for red pepper flakes

    Instead of red pepper flakes

    • Cayenne: About half as much. Even heat throughout, no flakes.
    • Hot sauce or chili crisp: To taste. Hot sauce adds vinegar; chili crisp adds crunch and oil.
    • A fresh hot chile: Half a jalapeño or serrano for each ½ tsp. Fresh, green heat.

    More for red pepper flakes

  • 3 green onions, sliced
    Swaps for green onions

    Instead of green onions

    • Chives: The same amount, for the green tops. Milder and more delicate, without crunch.
    • Shallot or red onion: Half as much, chopped fine, for the white parts. Stronger; best cooked or soaked in cold water first.
    • Leeks: The same amount, sliced thin. Milder and better cooked than raw.

    More for green onions

  • 3 cups cooked rice, for serving ≈ 474 g

Steps

  1. Whisk (how to whisk) Whisk Beat ingredients with a whisk to mix them smoothly or to add air. 1. Use a bowl big enough to whisk without splashing; set it on a damp towel to stop it spinning.2. Hold the whisk loosely and move it in quick circles or side to side, touching the bottom.3. For lumpy mixtures, add liquid a little at a time and whisk after each.4. For sauces on the stove, keep the whisk moving across the whole bottom of the pan. Done when: The mixture is even with no lumps or streaks of egg. How to whisk: mistakes to avoid
the soy sauce, hoisin, vinegar, sesame oil, cornstarch and water together in a small bowl.
  2. Heat the vegetable oil in a 12-inch skillet over medium-high heat until it shimmers.
  3. Add the green beans and cook, stirring only now and then, until blistered in spots and crisp-tender. Move them to a plate.
    ⏱ Blister beans: 6 min
  4. Add the pork to the hot pan and break it into small crumbles with a spatula.
  5. Cook without stirring too much until
browned (how to brown) Brown Cook food in a hot pan until its surface turns brown, which adds rich, roasted flavor. 1. Pat the food dry; for ground meat, let the pan get hot first.2. Add a little oil and spread the food in one layer.3. Leave it alone for a few minutes so the bottom browns, then turn or break it up.4. Work in batches if it won't fit in one layer.5. Pour off extra fat if the recipe says to. Done when: Most surfaces are brown, not gray, and the bottom of the pan has browned bits (they are flavor, not burn). Safety: Hot oil spatters: dry the food first, lay it in the pan moving away from you, and keep a lid nearby. Never put water on an oil fire; slide the lid over it and turn off the heat. Browned outside doesn't mean cooked inside: ground beef needs 160°F, poultry 165°F.How to brown meat and vegetables: mistakes to avoid
and crispy in spots, no pink remains and it reaches 160°F (71°C).
    160°F⏱ Brown pork: 6 min
  6. Push the pork to the side, add the garlic, ginger and pepper flakes (if using) to the cleared spot and stir until fragrant.
    ⏱ Garlic: 30 sec
  7. Return the green beans to the pan. Stir the sauce, pour it in and toss.
  8. Cook, tossing, until the sauce bubbles and coats everything.
    ⏱ Glaze: 1 min
  9. Sprinkle with green onions and serve over rice.

Tips

  • Ground chicken or turkey works too; cook it to 165°F.
  • Pat the green beans dry after washing so they blister instead of steam.
  • Use a separate cutting board for raw meat, and wash hands, boards and knives in hot soapy water after handling it.

Storage

Refrigerate in an airtight container within 2 hours, up to 3 days. Reheat in a skillet or microwave until hot.

Estimate from USDA FoodData Central; not medical or dietary advice. Based on 13 of 13 ingredients.

How we estimate

We add up USDA FoodData Central values for each measured ingredient as written and divide by the recipe's 4 servings, so changing the servings or units here doesn't change a serving. Brands, swaps, trimming and cooking all change the real numbers.

Not counted: red pepper flakes (optional).

Estimated cost

About $2.25 a serving

About $8.95 for the recipe as written (4 servings).

Estimate; prices vary by store and region. U.S. average prices for September 2026 from BLS Average Price Data and USDA ERS Purchase to Plate prices updated with the BLS Consumer Price Index. Priced: 10 of 13 ingredients, 97% by weight.

How we estimate

Each measured ingredient is weighed as in the nutrition estimate and priced at the U.S. average: BLS's average price where BLS publishes one, else USDA ERS's Purchase to Plate price for 2017-18 raised to September 2026 with the CPI for that food group. Whole packages, store brands, sales and regions all change the real cost: treat it as a ballpark.

  • ground pork $3.70 BLS
  • green beans $3.50 ERS
  • cooked rice $0.60 ERS
  • low-sodium soy sauce $0.35 ERS
  • green onions $0.35 ERS
  • garlic $0.15 ERS
  • sesame oil $0.15 ERS
  • rice vinegar $0.10 ERS
  • vegetable oil $0.10 ERS

Free: water (tap water).

Not priced (no official average price we can match, so not in the total): hoisin sauce, cornstarch, fresh ginger.

Not counted: red pepper flakes (optional, or to taste).
