stir-fry (how to stir-fry)
Stir-fry Cook small, even pieces over very high heat, keeping them moving, so they cook in minutes and stay crisp. 1. Cut everything and mix the sauce before you turn on the heat; it goes fast.2. Heat a wok or large skillet over high heat until a drop of water sizzles away at once.3. Add a high-heat oil, then the food that takes longest, in batches.4. Keep the food moving with a spatula, tossing every few seconds.5. Add the quick-cooking things and the sauce last and toss until glossy. Done when: Vegetables are bright and crisp-tender, meat is just cooked, and the sauce clings instead of pooling. Safety: Hot oil spatters: dry the food first, lay it in the pan moving away from you, and keep a lid nearby. Never put water on an oil fire; slide the lid over it and turn off the heat. How to stir-fry: mistakes to avoid - Add the remaining oil and the broccoli to the pan and stir-fry 1 minute. Add 2 tablespoons water, cover and steam until bright green and crisp-tender.⏱ Steam broccoli: 2 min
- Uncover, push the broccoli aside and add the garlic and ginger to the cleared spot. Stir them for 30 seconds until fragrant.⏱ Garlic & ginger: 30 sec
- Return the chicken, stir the sauce again (the cornstarch settles) and pour it in. Toss until the sauce bubbles and turns glossy.⏱ Thicken sauce: 1 min
- Sprinkle with green onions and serve over rice.

Tips
- Chicken slices more neatly if it's partly frozen for 15 minutes first.
- Stir-frying goes fast, so have every ingredient chopped and the sauce mixed before you start.
- For gluten-free, use tamari and a gluten-free oyster sauce.
Storage
Refrigerate up to 3 days. Reheat in a skillet or microwave until steaming hot.

Estimate from USDA FoodData Central; not medical or dietary advice. Based on 16 of 16 ingredients.
How we estimate
We add up USDA FoodData Central values for each measured ingredient as written and divide by the recipe's 4 servings, so changing the servings or units here doesn't change a serving. Brands, swaps, trimming and cooking all change the real numbers.
Not counted: cooked rice (to taste or as needed).
Estimated cost
About $2.55 a serving
About $10.25 for the recipe as written (4 servings).
Estimate; prices vary by store and region. U.S. average prices for September 2026 from BLS Average Price Data and USDA ERS Purchase to Plate prices updated with the BLS Consumer Price Index. Priced: 12 of 16 ingredients, 97% by weight.
How we estimate
Each measured ingredient is weighed as in the nutrition estimate and priced at the U.S. average: BLS's average price where BLS publishes one, else USDA ERS's Purchase to Plate price for 2017-18 raised to September 2026 with the CPI for that food group. Whole packages, store brands, sales and regions all change the real cost: treat it as a ballpark.
