Chicken broth: what it is, how to pick and store it

The liquid from simmering chicken (and often vegetables). Low-sodium broth lets you season the dish yourself.

How to pick it

Low-sodium cartons, or bouillon or base mixed with water, all work; taste before you add salt.

How to store it

Unopened cartons and cans keep in the cupboard. Once opened, refrigerate it and use it within a few days, or freeze it in measured portions.

Out of chicken broth? What to use instead

  • Vegetable broth: The same amount. Lighter and slightly sweeter.
  • Bouillon cube, powder or paste + water: Follow the label for the amount of liquid. Close in flavor; a little saltier.
  • Water + extra seasoning: The same amount, with ½ tsp salt per cup and extra garlic, onion or herbs. Flatter and lighter, but fine where other ingredients bring plenty of flavor.
