Ingredients

  • Beans
  • 1 lb dried red kidney beans, or small red beans, picked over and rinsed
  • Pot
  • 12 oz andouille sausage, fully cooked, sliced
  • 1 large onion, diced
    Swaps for onion

    Instead of onion

    • Another onion: The same amount. Yellow is the all-rounder; white is sharper and crisper; red is milder raw and adds color; sweet onions are mildest.
    • Shallots: The same amount, chopped. Milder and sweeter, with a hint of garlic.
    • Leeks: About 1½ times as much, white and light green parts. Milder and softer when cooked.

    All 4 swaps for onion

  • 1 green bell pepper, diced
  • 2 celery ribs, diced
  • 4 cloves garlic, minced
    Swaps for garlic

    Instead of garlic

    • Garlic powder: ⅛ tsp for each clove. Mellower and sweeter, with no bite.
    • Jarred minced garlic: ½ tsp for each clove. Milder and slightly sour from the preserving liquid.

    More for garlic

  • 1 smoked ham hock (optional)
  • 4 cups chicken broth
    Swaps for chicken broth

    Instead of broth

    • Vegetable broth: The same amount. Lighter and slightly sweeter.
    • Bouillon cube, powder or paste + water: Follow the label for the amount of liquid. Close in flavor; a little saltier.
    • Water + extra seasoning: The same amount, with ½ tsp salt per cup and extra garlic, onion or herbs. Flatter and lighter, but fine where other ingredients bring plenty of flavor.

    More for broth

  • 2 cups water
  • 2 bay leaves
  • 1 tsp dried thyme
    Swaps for dried thyme

    Instead of thyme

    • Fresh thyme: 1 tbsp chopped fresh for each 1 tsp dried (three times as much). Brighter and more lemony.
    • Italian seasoning or dried marjoram: The same amount. Close; Italian seasoning adds oregano and basil.

    More for thyme

  • 1 tsp smoked paprika
    Swaps for smoked paprika

    Instead of paprika

    • Sweet paprika + a pinch of chipotle or cumin: The same amount of paprika, plus a pinch. Some smokiness without the full smoked flavor; chipotle adds heat.
    • Chipotle powder: About ¼ the amount. Smoky and much hotter.

    More for paprika

  • ½ tsp cayenne pepper
    Swaps for cayenne pepper

    Instead of cayenne pepper

    • Red pepper flakes: The same amount, crushed fine. Slightly milder, with visible flakes.
    • Hot sauce: A few dashes for each pinch. Adds vinegar and a little liquid.
    • Chipotle powder or hot paprika: The same amount. Chipotle is smoky; hot paprika is milder and fruitier.

    More for cayenne pepper

  • 1 tsp black pepper
  • 1 ½ tsp kosher salt, add at the end, to taste
    Swaps for kosher salt

    Instead of salt

    • Table salt or fine sea salt: About half as much as Diamond Crystal kosher, about ¾ as much as Morton kosher. The same saltiness when measured this way.
    • Salt by weight: 1 tsp is about 6 grams of table salt, 5 grams of Morton kosher, 3 grams of Diamond Crystal kosher. The most reliable way to swap, especially in baking and brines.

    More for salt

  • To serve
  • cooked long-grain white rice
  • 3 green onions, sliced
    Swaps for green onions

    Instead of green onions

    • Chives: The same amount, for the green tops. Milder and more delicate, without crunch.
    • Shallot or red onion: Half as much, chopped fine, for the white parts. Stronger; best cooked or soaked in cold water first.
    • Leeks: The same amount, sliced thin. Milder and better cooked than raw.

    More for green onions

  • hot sauce

Steps

  1. Put the beans in a large bowl, cover with 3 inches of cold water and soak overnight.
    ⏱ Soak beans: 8 hr
  2. Drain and rinse the beans.
  3. Put the beans in a large pot, cover with fresh water by 2 inches and bring to a full
boil (how to boil) Boil Heat liquid until big bubbles rise and break all over the surface. 1. Use a pot big enough that the water fills it no more than three quarters.2. Cover it to boil faster, over high heat.3. Salt pasta or vegetable water once it boils.4. Add the food, stir, and bring it back to a boil before you start timing. Done when: A rolling boil keeps bubbling hard even when you stir. Safety: Turn pot handles toward the back of the stove, and drain pasta into a colander in the sink, pouring away from you. Steam burns fast: lift lids and foil away from your face, tipping the far edge up first. How to boil water for pasta and vegetables: mistakes to avoid
    over high heat.
  4. Boil hard, uncovered. This step matters: raw kidney beans contain a natural toxin, and a slow cooker alone may not get hot enough to destroy it.
    ⏱ Boil beans: 10 min
  5. Drain the beans in a colander and put them in a 6-quart slow cooker.
  6. Add the sausage, onion, bell pepper, celery, garlic, ham hock, broth, water, bay leaves, thyme, smoked paprika, cayenne and black pepper. Stir.
  7. Cover and cook on LOW for 8 to 9 hours (or HIGH for 5 to 6 hours), until the beans are very soft and break apart easily.
⏱ Slow cook (LOW): 8 hr
  8. Remove the bay leaves and ham hock. Pull any meat off the hock,
chop (how to chop) Chop Cut food into bite-size pieces that don't have to match exactly. 1. Cut a flat side on round food and lay it on that side so it can't roll.2. Slice the food into strips about as wide as the pieces you want.3. Turn the strips and cut across them.4. Rock the knife over any big pieces until they are about the same size. Done when: The pieces are close enough in size to cook in the same time, about ½ inch unless the recipe says otherwise. Safety: Keep the fingertips of your guiding hand curled under, knuckles toward the blade, and set the board on a damp towel so it can't slide. How to chop vegetables and herbs: mistakes to avoid
it and return it to the pot.
  9. Use the back of a spoon to mash about a cup of beans against the side of the cooker, then stir. This makes the sauce creamy.
  10. Stir in the salt, cover and cook on HIGH to thicken a little more.
    ⏱ Thicken (HIGH): 20 min
  11. Taste and adjust the salt and cayenne. Serve over rice with green onions and hot sauce.

Tips

  • Salt the beans at the end. Old beans or very salty broth can keep them from softening.
  • If your beans are still firm after 9 hours, they may be old. Switch to HIGH and give them another hour.

Storage

Refrigerate up to 4 days or freeze up to 3 months. It thickens as it sits; loosen with water when reheating.

Make ahead

Even better the next day. Make it a day ahead and reheat on the stove.

Cook once, eat twice: Double it (16 servings instead of 8), eat half and freeze the other half. It keeps 3 months frozen, by the storage note above. Print a freezer label · More freezer meals

How we estimate

We add up USDA FoodData Central values for each measured ingredient as written and divide by the recipe's 8 servings, so changing the servings or units here doesn't change a serving. Brands, swaps, trimming and cooking all change the real numbers.

Not counted: smoked ham hock (optional); cooked long-grain white rice, hot sauce (to taste or as needed).
