Nutmeg: what it is, how to pick and store it

The seed of a tropical tree: warm and sweet. A little goes a long way in cream sauces, eggnog, spinach and pumpkin pie.

How to pick it

A whole nutmeg grated on a fine grater is far more fragrant than ground.

How to store it

Keep it in a closed jar away from heat, steam and light (not above the stove). Ground spices fade with time: if it smells faint, it will taste faint, so use a little more or replace it.

Out of nutmeg? What to use instead

  • Ground mace: A little less. Made from the same fruit; slightly sharper.
  • Pumpkin pie spice or allspice: The same amount. Warmer and more cinnamon-forward.
