Black pepper: what it is, how to pick and store it

The dried berries of a tropical vine, sold whole as peppercorns or ground. Freshly ground pepper is sharper and more fragrant than pre-ground.

How to pick it

Whole peppercorns in a grinder taste best; pre-ground pepper is fine for rubs and big batches.

How to store it

A closed jar away from heat and light. Whole peppercorns hold their flavor far longer than ground pepper.
