Garlic powder: what it is, how to pick and store it

Dried, ground garlic: milder and sweeter than fresh, and it spreads evenly through rubs, dressings and breading.

How to pick it

Garlic powder (fine) and granulated garlic (coarser) work about the same. Garlic salt is mostly salt, so cut the recipe's salt if you use it.

How to store it

Keep it in a closed jar away from heat, steam and light (not above the stove). Ground spices fade with time: if it smells faint, it will taste faint, so use a little more or replace it. Steam makes it cake, so don't shake it over a steaming pot.
