Ingredients

  • 2 lb carrots, about 12 medium
  • 2 tbsp olive oil
    Swaps for olive oil

    Instead of olive oil

    • Avocado oil or another neutral oil: The same amount. No olive flavor; avocado oil handles higher heat.
    • Butter: The same amount. Richer and nutty when browned.
    • A neutral oil + more seasoning: The same amount. Dressings lose the fruity, peppery note; a little extra lemon, garlic or mustard makes up for it.

    More for olive oil

  • ¾ tsp kosher salt
    Swaps for kosher salt

    Instead of salt

    • Table salt or fine sea salt: About half as much as Diamond Crystal kosher, about ¾ as much as Morton kosher. The same saltiness when measured this way.
    • Salt by weight: 1 tsp is about 6 grams of table salt, 5 grams of Morton kosher, 3 grams of Diamond Crystal kosher. The most reliable way to swap, especially in baking and brines.

    More for salt

  • ¼ tsp black pepper
  • 2 tbsp honey
    Swaps for honey

    Instead of honey

    • Maple syrup: The same amount. Thinner, with a maple flavor; a little less sweet.
    • Agave syrup: A little less (about ¾ the amount). Sweeter and very neutral; thinner.
    • Light corn syrup or golden syrup: The same amount. Less sweet and neutral (golden syrup tastes buttery).

    More for honey

Don't give honey, even baked into food, to babies under 1 year old.

  • 1 tbsp unsalted butter, melted
    Swaps for unsalted butter

    Instead of butter

    • Salted butter: The same amount, with about ¼ tsp less salt per stick (½ cup) elsewhere in the recipe. Nothing noticeable once you cut the salt.
    • Plant-based butter sticks: The same amount. The closest swap.
    • Refined coconut oil: The same amount: solid when the butter is soft or cold, melted when it is melted. It is all fat, so bakes are a bit more tender and rich, with no butter flavor.

  • 1 tsp fresh thyme leaves, or 1/2 tsp dried thyme
    Swaps for fresh thyme leaves

    Instead of thyme

    • Dried thyme: 1 tsp dried for each 1 tbsp chopped fresh (a third as much). Earthier and a little less bright, but dried thyme holds up well in soups, stews and roasts.
    • Fresh oregano or marjoram: The same amount. Oregano is stronger; marjoram is sweeter and milder.
    • Fresh rosemary: Half as much. Piney and stronger.

    More for thyme

  • flaky sea salt, for finishing (optional)

Steps

  1. Heat the oven to 425°F (220°C) with a rack in the middle.
    425°F
  2. Peel the carrots and trim off both ends.
  3. Cut the carrots into pieces about 3 inches long, then halve the thick pieces lengthwise so every piece is about the same thickness.
  4. Pile the carrots on a sheet pan, add the oil, salt and pepper, and toss with your hands until coated. Spread them out in one layer.
  5. Roast (how to roast) Roast Cook food uncovered in a hot oven so the outside browns while the inside cooks through. 1. Heat the oven fully before the food goes in, usually 400 to 450°F for vegetables.2. Toss vegetables with oil and salt; dry and season meat.3. Spread everything out on a sheet pan or in a roasting pan with room around each piece.4. Roast, turning vegetables once halfway, until browned at the edges.5. For meat, check the center with a thermometer. Done when: Vegetables are browned at the edges and tender in the middle; meat reaches its safe temperature. Safety: Use dry oven mitts (wet ones pass heat straight through) and tilt hot pans away from you to avoid the fat and steam. How to roast meat and vegetables: mistakes to avoid
until the undersides are starting to brown.
    425°F⏱ Roast: 20 min
  6. While the carrots roast, stir the honey, melted butter and thyme together in a small bowl.
  7. Drizzle the honey mixture over the hot carrots and toss them with tongs right on the pan.
  8. Roast again until the carrots are glazed and a fork slides in easily.
    425°F⏱ Glaze: 8 min
  9. Sprinkle with flaky salt if you like and serve warm.

Tips

  • Adding the honey late is the trick. Honey in the oven for the full time scorches before the carrots are done.
  • Even thickness matters more than even length, so thin and thick pieces finish together.

Storage

Refrigerate up to 4 days. Reheat in a 400°F oven for about 8 minutes.

Estimate from USDA FoodData Central; not medical or dietary advice. Based on 7 of 7 ingredients.

How we estimate

We add up USDA FoodData Central values for each measured ingredient as written and divide by the recipe's 4 servings, so changing the servings or units here doesn't change a serving. Brands, swaps, trimming and cooking all change the real numbers.

Not counted: flaky sea salt (to taste or as needed).

Estimated cost

About $1.15 a serving

About $4.55 for the recipe as written (4 servings).

Estimate; prices vary by store and region. U.S. average prices for September 2026 from BLS Average Price Data and USDA ERS Purchase to Plate prices updated with the BLS Consumer Price Index. Priced: 4 of 7 ingredients, 100% by weight.

How we estimate

Each measured ingredient is weighed as in the nutrition estimate and priced at the U.S. average: BLS's average price where BLS publishes one, else USDA ERS's Purchase to Plate price for 2017-18 raised to September 2026 with the CPI for that food group. Whole packages, store brands, sales and regions all change the real cost: treat it as a ballpark.

  • carrots $3.40 ERS
  • honey $0.65 ERS
  • olive oil $0.40 ERS
  • unsalted butter $0.10 BLS

Not priced (no official average price we can match, so not in the total): kosher salt, black pepper, fresh thyme leaves.

Not counted: flaky sea salt (optional, or to taste).
