Carrots: what they are, how to pick and store them

A sweet root vegetable, good raw, roasted, or with onion and celery as the base of soups and stews.

How to pick them

Firm, smooth, bright carrots; skip limp, cracked or sprouting ones. Tops, if they're on, should look fresh.

Usually at their best from September to March: see carrots in season.

How to store them

Cut off any green tops (they pull moisture out), then refrigerate carrots in a bag in the crisper; they keep for weeks.
