Roast Chicken · Spatchcock Lemon Pepper

Spatchcocked Lemon Pepper Chicken

Cutting out the backbone lets a whole chicken lie flat, so it roasts in about 45 minutes with crisp skin everywhere. Bright lemon pepper seasoning keeps it simple.

Ingredients

  • 1 whole chicken, 4 to 5 lb, giblets removed
  • 1 tbsp olive oil
    Swaps for olive oil

    Instead of olive oil

    • Avocado oil or another neutral oil: The same amount. No olive flavor; avocado oil handles higher heat.
    • Butter: The same amount. Richer and nutty when browned.
    • A neutral oil + more seasoning: The same amount. Dressings lose the fruity, peppery note; a little extra lemon, garlic or mustard makes up for it.

    More for olive oil

  • 2 lemons, zested, then cut into wedges
  • 2 tsp kosher salt
    Swaps for kosher salt

    Instead of salt

    • Table salt or fine sea salt: About half as much as Diamond Crystal kosher, about ¾ as much as Morton kosher. The same saltiness when measured this way.
    • Salt by weight: 1 tsp is about 6 grams of table salt, 5 grams of Morton kosher, 3 grams of Diamond Crystal kosher. The most reliable way to swap, especially in baking and brines.

    More for salt

  • 1 ½ tsp black pepper, coarsely ground
  • 1 tsp garlic powder
    Swaps for garlic powder

    Instead of garlic

    • Fresh garlic: 1 clove for each ⅛ tsp powder, minced fine. Sharper and stronger.
    • Granulated garlic: About twice as much as the powder. The same flavor in coarser grains, which blend better into rubs.

    More for garlic

  • ½ tsp onion powder

Steps

    450°F
  2. Set the chicken breast side down on a cutting board with the neck end away from you.
  3. Cut along both sides of the backbone with kitchen shears and lift it out. Save it in the freezer for broth.
  4. Flip the chicken breast side up, spread the legs out and press firmly on the breastbone with the heel of your hand until it cracks and the bird lies flat.
  5. Pat the chicken very dry with paper towels.
  6. Stir the lemon zest, salt, pepper, garlic powder and onion powder together in a small bowl.
  7. Rub the oil all over the chicken, then sprinkle the seasoning evenly over both sides.
  8. Lay the chicken skin side up on the rack and tuck the wing tips under the breast.
  9. Roast (how to roast) Roast Cook food uncovered in a hot oven so the outside browns while the inside cooks through. 1. Heat the oven fully before the food goes in, usually 400 to 450°F for vegetables.2. Toss vegetables with oil and salt; dry and season meat.3. Spread everything out on a sheet pan or in a roasting pan with room around each piece.4. Roast, turning vegetables once halfway, until browned at the edges.5. For meat, check the center with a thermometer. Done when: Vegetables are browned at the edges and tender in the middle; meat reaches its safe temperature. Safety: Use dry oven mitts (wet ones pass heat straight through) and tilt hot pans away from you to avoid the fat and steam. How to roast meat and vegetables: mistakes to avoid
until the skin is browned and a thermometer reads 165°F (74°C) in the thickest part of the breast and thigh. Start checking at 35 minutes.

Tips

  • Line the sheet pan with foil under the rack for easy cleanup.
  • Tuck a few halved small potatoes on the pan around the rack edges for a built-in side.
  • Use a separate cutting board for raw poultry, and wash hands, boards and knives in hot soapy water after handling it. Don't rinse raw chicken; it only spreads germs around the sink.

Storage

Refrigerate in an airtight container within 2 hours, up to 3 days. Reheat until hot all the way through (165°F).

Estimate from USDA FoodData Central; not medical or dietary advice. Based on 7 of 7 ingredients.

How we estimate

We add up USDA FoodData Central values for each measured ingredient as written and divide by the recipe's 4 servings, so changing the servings or units here doesn't change a serving. Brands, swaps, trimming and cooking all change the real numbers.

Estimated cost

About $2.65 a serving

About $10.75 for the recipe as written (4 servings).

Estimate; prices vary by store and region. U.S. average prices for September 2026 from BLS Average Price Data and USDA ERS Purchase to Plate prices updated with the BLS Consumer Price Index. Priced: 3 of 7 ingredients, 99% by weight.

How we estimate

Each measured ingredient is weighed as in the nutrition estimate and priced at the U.S. average: BLS's average price where BLS publishes one, else USDA ERS's Purchase to Plate price for 2017-18 raised to September 2026 with the CPI for that food group. Whole packages, store brands, sales and regions all change the real cost: treat it as a ballpark.

  • whole chicken $9.30 BLS
  • lemons $1.15 ERS
  • olive oil $0.20 ERS

Not priced (no official average price we can match, so not in the total): kosher salt, black pepper, garlic powder, onion powder.
