Limes: what they are, how to pick and store them

Tart and fragrant; the juice and zest are central to Mexican, Thai and Vietnamese cooking.

How to pick them

Heavy for their size, with glossy skin that gives a little. Roll one on the counter under your palm before cutting to get more juice.

How to store them

Refrigerate them in a bag in the crisper.

Out of limes? What to use instead

  • Lemon juice: The same amount. Milder aroma; still bright.
  • Bottled lime juice: The same amount. Flatter and more sour; fine in cooked dishes.
  • Rice vinegar or white vinegar: Half as much. Sour without the citrus aroma.
