Tomatoes: what they are, how to pick and store them

Fresh tomatoes are at their best in summer. Out of season, cherry and grape tomatoes taste better than big slicers, and canned tomatoes are better for sauce.

How to pick them

Heavy, fragrant at the stem end, with smooth skin and a little give.

Usually at their best from July to September: see tomatoes in season.

How to store them

Keep them on the counter, out of the sun, until ripe. Refrigerate only very ripe or cut tomatoes, and let them warm up before eating.
