Ingredients

  • 8 slices bacon
  • 8 large eggs
  • 2 tbsp whole milk
    Swaps for whole milk

    Instead of milk

    • Unsweetened soy milk: The same amount. The closest plant milk for baking: its protein helps things brown and set.
    • Unsweetened oat milk: The same amount. Creamy and mild with a hint of sweetness.
    • Unsweetened almond milk: The same amount. Thinner and less rich, so cakes are a little paler and drier.

  • ¼ tsp kosher salt
    Swaps for kosher salt

    Instead of salt

    • Table salt or fine sea salt: About half as much as Diamond Crystal kosher, about ¾ as much as Morton kosher. The same saltiness when measured this way.
    • Salt by weight: 1 tsp is about 6 grams of table salt, 5 grams of Morton kosher, 3 grams of Diamond Crystal kosher. The most reliable way to swap, especially in baking and brines.

    More for salt

  • ¼ tsp black pepper
  • 1 tbsp butter
    Swaps for butter

    Instead of butter

    • Plant-based butter sticks: The same amount. The closest swap.
    • Refined coconut oil: The same amount: solid when the butter is soft or cold, melted when it is melted. It is all fat, so bakes are a bit more tender and rich, with no butter flavor.
    • Vegetable oil: 3 tbsp oil for every 4 tbsp (¼ cup) melted butter. Cakes and muffins come out moister and stay soft longer, without a buttery taste.

  • 1 cup cheddar cheese, shredded ≈ 113 g
    Swaps for cheddar cheese

    Instead of cheddar

    • Colby or Colby Jack: The same amount. Milder and softer, and melts very smoothly.
    • Monterey Jack: The same amount. Mild and buttery, one of the best melting cheeses.
    • Gouda or Gruyère: The same amount. Nuttier and richer; melts beautifully.

    All 4 swaps for cheddar

  • 4 flour tortillas, 10-inch, burrito size
  • hot sauce, or salsa, to serve (optional)

Steps

  1. Lay the bacon in a cold large skillet and set it over medium heat.
  2. Cook, turning now and then, until
browned (how to brown) Brown Cook food in a hot pan until its surface turns brown, which adds rich, roasted flavor. 1. Pat the food dry; for ground meat, let the pan get hot first.2. Add a little oil and spread the food in one layer.3. Leave it alone for a few minutes so the bottom browns, then turn or break it up.4. Work in batches if it won't fit in one layer.5. Pour off extra fat if the recipe says to. Done when: Most surfaces are brown, not gray, and the bottom of the pan has browned bits (they are flavor, not burn). Safety: Hot oil spatters: dry the food first, lay it in the pan moving away from you, and keep a lid nearby. Never put water on an oil fire; slide the lid over it and turn off the heat. Browned outside doesn't mean cooked inside: ground beef needs 160°F, poultry 165°F.How to brown meat and vegetables: mistakes to avoid

    ⏱ Cook bacon: 10 min
  3. Move the bacon to a paper-towel-lined plate. When it's cool enough to touch, break each strip in half.
  4. Pour off the bacon fat and wipe out the skillet with a paper towel, leaving a light film.
  5. Whisk (how to whisk) Whisk Beat ingredients with a whisk to mix them smoothly or to add air. 1. Use a bowl big enough to whisk without splashing; set it on a damp towel to stop it spinning.2. Hold the whisk loosely and move it in quick circles or side to side, touching the bottom.3. For lumpy mixtures, add liquid a little at a time and whisk after each.4. For sauces on the stove, keep the whisk moving across the whole bottom of the pan. Done when: The mixture is even with no lumps or streaks of egg. How to whisk: mistakes to avoid
the eggs, milk, salt and pepper in a bowl until smooth.
  6. Melt the butter in the skillet over medium-low heat and pour in the eggs.
  7. Stir slowly with a spatula until the eggs form soft curds and no runny egg remains.
    ⏱ Scramble: 4 min
  8. Move the eggs to a plate and wipe the skillet clean.
  9. Warm the tortillas in the microwave for 20 seconds so they bend without cracking.
  10. Lay a tortilla flat and fill the center with a quarter of the eggs, 4 bacon pieces and 1/4 cup cheese.
  11. Fold the bottom over the filling, fold in the sides and roll it up tightly. Repeat with the rest.
  12. Set the burritos seam side down in the dry skillet over medium heat. Cook until golden, turning once, so the seam seals and the cheese melts.
    ⏱ Toast: 4 min
  13. Cut in half and serve with hot sauce or salsa, if you like.

Tips

  • Starting bacon in a cold pan renders the fat slowly so the strips cook evenly and don't burn.
  • To freeze, skip the toasting step, wrap each burrito in foil and freeze. Reheat as for freezer burritos.

Storage

Wrap and refrigerate up to 3 days or freeze up to 2 months. Reheat until 165°F (74°C) in the center.

Cook once, eat twice: Double it (8 servings instead of 4), eat half and freeze the other half. It keeps 2 months frozen, by the storage note above. Print a freezer label · More freezer meals

Estimate from USDA FoodData Central; not medical or dietary advice. Based on 8 of 8 ingredients.

How we estimate

We add up USDA FoodData Central values for each measured ingredient as written and divide by the recipe's 4 servings, so changing the servings or units here doesn't change a serving. Brands, swaps, trimming and cooking all change the real numbers.

Not counted: hot sauce (to taste or as needed).

Estimated cost

About $2.10 a serving

About $8.35 for the recipe as written (4 servings).

Estimate; prices vary by store and region. U.S. average prices for September 2026 from BLS Average Price Data and USDA ERS Purchase to Plate prices updated with the BLS Consumer Price Index. Priced: 6 of 8 ingredients, 100% by weight.

How we estimate

Each measured ingredient is weighed as in the nutrition estimate and priced at the U.S. average: BLS's average price where BLS publishes one, else USDA ERS's Purchase to Plate price for 2017-18 raised to September 2026 with the CPI for that food group. Whole packages, store brands, sales and regions all change the real cost: treat it as a ballpark.

  • bacon $3.35 BLS
  • flour tortillas $1.80 ERS
  • cheddar cheese $1.55 BLS
  • eggs $1.50 BLS
  • butter $0.10 BLS
  • whole milk $0.05 BLS

Not priced (no official average price we can match, so not in the total): kosher salt, black pepper.

Not counted: hot sauce (optional, or to taste).
