Ingredients

  • 4 medium russet potatoes, about 8 oz each
  • 1 tbsp olive oil
    Swaps for olive oil

    Instead of olive oil

    • Avocado oil or another neutral oil: The same amount. No olive flavor; avocado oil handles higher heat.
    • Butter: The same amount. Richer and nutty when browned.
    • A neutral oil + more seasoning: The same amount. Dressings lose the fruity, peppery note; a little extra lemon, garlic or mustard makes up for it.

    More for olive oil

  • 1 tsp kosher salt
    Swaps for kosher salt

    Instead of salt

    • Table salt or fine sea salt: About half as much as Diamond Crystal kosher, about ¾ as much as Morton kosher. The same saltiness when measured this way.
    • Salt by weight: 1 tsp is about 6 grams of table salt, 5 grams of Morton kosher, 3 grams of Diamond Crystal kosher. The most reliable way to swap, especially in baking and brines.

    More for salt

  • Toppings
  • ¼ cup unsalted butter, for serving
    Swaps for unsalted butter

    Instead of butter

    • Salted butter: The same amount, with about ¼ tsp less salt per stick (½ cup) elsewhere in the recipe. Nothing noticeable once you cut the salt.
    • Plant-based butter sticks: The same amount. The closest swap.
    • Refined coconut oil: The same amount: solid when the butter is soft or cold, melted when it is melted. It is all fat, so bakes are a bit more tender and rich, with no butter flavor.

  • ½ cup sour cream, for serving (optional) ≈ 115 g
    Swaps for sour cream

    Instead of sour cream

    • Plain Greek yogurt: The same amount (full-fat for baking). Tangier and a little less rich.
    • Crème fraîche: The same amount. Richer and milder, and it doesn't curdle in hot sauces.
    • Cottage cheese, blended: The same amount, blended smooth with a squeeze of lemon. Milder and less rich, with more protein.

All 4 swaps for sour cream

  • 2 tbsp chives, chopped (optional)
    Swaps for chives

    Instead of chives

    • Dried chives: 1 tsp dried for each 1 tbsp chopped fresh (a third as much). Freeze-dried chives keep color but little flavor; use them only as a garnish.
    • Green onion tops: The same amount, sliced thin. Stronger and crunchier.

    More for chives

  • ½ cup cheddar cheese, shredded (optional) ≈ 57 g
    Swaps for cheddar cheese

    Instead of cheddar

    • Colby or Colby Jack: The same amount. Milder and softer, and melts very smoothly.
    • Monterey Jack: The same amount. Mild and buttery, one of the best melting cheeses.
    • Gouda or Gruyère: The same amount. Nuttier and richer; melts beautifully.

Steps

  1. Heat the oven to 425°F (220°C) with one rack in the middle and another rack below it.
    425°F
  2. Scrub the potatoes under running water, then dry them completely with a towel.
  3. Prick each potato 4 or 5 times with a fork so steam can escape.
  4. Rub the potatoes all over with the oil, then sprinkle them with the salt.
  5. Set the potatoes directly on the middle rack. Slide a sheet pan onto the rack below to catch any drips.
  6. Bake until the skin is crisp and a fork slides into the center with no resistance. An instant-read thermometer in the center should read about 205°F for the fluffiest texture.
    425°F⏱ Bake: 50 min
  7. Using an oven mitt, cut a slit along the top of each potato and push the ends toward the middle to fluff the inside.
  8. Add butter, a pinch of salt and any toppings you like, and serve.

Tips

  • Skip the foil. Wrapping potatoes steams them and the skin stays soft.
  • Bigger potatoes (12 oz or more) can take 60 to 70 minutes.

Storage

Refrigerate up to 4 days. Reheat in a 400°F oven for about 15 minutes to re-crisp the skin.

Estimate from USDA FoodData Central; not medical or dietary advice. Based on 4 of 4 ingredients.

How we estimate

We add up USDA FoodData Central values for each measured ingredient as written and divide by the recipe's 4 servings, so changing the servings or units here doesn't change a serving. Brands, swaps, trimming and cooking all change the real numbers.

Not counted: sour cream, chives, cheddar cheese (optional).

Estimated cost

About $0.65 a serving

About $2.65 for the recipe as written (4 servings).

Estimate; prices vary by store and region. U.S. average prices for September 2026 from BLS Average Price Data and USDA ERS Purchase to Plate prices updated with the BLS Consumer Price Index. Priced: 3 of 4 ingredients, 100% by weight.

How we estimate

Each measured ingredient is weighed as in the nutrition estimate and priced at the U.S. average: BLS's average price where BLS publishes one, else USDA ERS's Purchase to Plate price for 2017-18 raised to September 2026 with the CPI for that food group. Whole packages, store brands, sales and regions all change the real cost: treat it as a ballpark.

  • russet potatoes $2.00 BLS
  • unsalted butter $0.50 BLS
  • olive oil $0.20 ERS

Not priced (no official average price we can match, so not in the total): kosher salt.

Not counted: sour cream, chives, cheddar cheese (optional, or to taste).
