Cheddar: what it is, how to pick and store it

A firm cow's-milk cheese that ranges from mild to extra sharp as it ages. Sharper cheddar has more flavor; younger cheddar melts more smoothly.

How to pick it

Shred a block yourself for the smoothest melt: bagged shreds are coated with starch so they don't clump.

How to store it

Wrap it well and refrigerate.

  • Mold on a hard cheese like cheddar can be cut away: cut off at least 1 inch around and below the spot, keeping the knife out of the mold. (USDA FSIS, Molds on Food)

Out of cheddar? What to use instead

  • Colby or Colby Jack: The same amount. Milder and softer, and melts very smoothly.
  • Monterey Jack: The same amount. Mild and buttery, one of the best melting cheeses.
  • Gouda or Gruyère: The same amount. Nuttier and richer; melts beautifully.
  • Dairy-free cheddar-style shreds: The same amount. Melts less and can turn gummy; covering the pan helps it soften.
