Chives: what they are, how to pick and store them

Thin, hollow green stems with a gentle onion flavor; add them raw at the end, on eggs, potatoes and soups.

How to pick them

Bright green and firm, with no slimy or yellow tips.

How to store them

Wrap them in a damp paper towel in a bag in the fridge. Snip them with scissors instead of chopping.
