Dijon mustard: what it is, how to pick and store it

A smooth, sharp French-style mustard made with white wine or vinegar. It seasons and also holds vinaigrettes together.

How to pick it

Any Dijon works. Whole-grain mustard is milder and coarser; yellow mustard is milder still.

How to store it

Refrigerate after opening to keep its bite; the acid keeps it a long time.

Out of dijon mustard? What to use instead

  • Another prepared mustard: The same amount. Yellow is milder and more vinegary; Dijon is sharper; whole-grain adds texture; spicy brown is in between.
  • Dry mustard: 1 tsp dry mustard + 1 tsp water + 1 tsp white wine vinegar for each 1 tbsp. Sharper and less smooth.
