Ingredients
- 3 ripe avocados, they should yield to gentle pressure
- 2 tbsp lime juice, from about 1 lime, plus more to taste
Swaps for lime juice
Instead of lime juice
- Lemon juice: The same amount. Milder aroma; still bright.
- Bottled lime juice: The same amount. Flatter and more sour; fine in cooked dishes.
- Rice vinegar or white vinegar: Half as much. Sour without the citrus aroma.
- ½ tsp kosher salt, plus more to taste
Swaps for kosher salt
Instead of salt
- Table salt or fine sea salt: About half as much as Diamond Crystal kosher, about ¾ as much as Morton kosher. The same saltiness when measured this way.
- Salt by weight: 1 tsp is about 6 grams of table salt, 5 grams of Morton kosher, 3 grams of Diamond Crystal kosher. The most reliable way to swap, especially in baking and brines.
- ¼ cup white onion, finely chopped ≈ 40 g
Swaps for white onion
Instead of onion
- Another onion: The same amount. Yellow is the all-rounder; white is sharper and crisper; red is milder raw and adds color; sweet onions are mildest.
- Shallots: The same amount, chopped. Milder and sweeter, with a hint of garlic.
- Leeks: About 1½ times as much, white and light green parts. Milder and softer when cooked.
- 1 jalapeño, seeded and minced
Swaps for jalapeño
Instead of jalapeños
- Serrano: About half as many. Hotter and brighter.
- Poblano or Anaheim pepper: About half a poblano for each jalapeño. Much milder and earthier.
- Canned diced green chiles: 2 tbsp for each jalapeño. Mild and soft; no crunch.
Wear gloves or wash your hands well after cutting hot peppers, and keep them away from your eyes.
- ¼ cup fresh cilantro, chopped
Swaps for fresh cilantro
Instead of cilantro
- Dried cilantro: 1 tsp dried for each 1 tbsp chopped fresh (a third as much). Dried cilantro has almost no flavor; skip it as a garnish and add more of the other seasonings.
- Flat-leaf parsley + lime zest: The same amount of parsley, plus a little lime zest. Fresh and green, without the soapy taste some people get from cilantro.
- Thai basil or mint: Half as much. Sweeter and more perfumed.
- 1 Roma tomato, seeded and diced (optional)
- tortilla chips, for serving

Fold (how to fold)
Fold Combine a light mixture (whipped cream, beaten whites) or chunky add-ins into a batter gently, so it stays airy. 1. Put the lighter mixture on top of the heavier one, or add the flour or chips.2. Cut a rubber spatula straight down through the middle to the bottom of the bowl.3. Sweep it across the bottom and up the side, then turn it over on top.4. Turn the bowl a quarter turn and repeat.5. Stop as soon as no streaks remain. Done when: There are no dry streaks or white blobs, and the mixture still looks light and puffy. Safety: Batters with raw eggs or flour aren't safe to eat raw.How to fold ingredients into a batter: mistakes to avoid - Taste with a chip and add more salt or lime until it's bright and well seasoned. Serve right away.Kid step

Tips
- Wash your hands after handling jalapeño and don't touch your eyes. Leave in some seeds for extra heat.
- Never try to stab a pit with the knife while holding the avocado in your hand. Scoop it out with a spoon instead.
Storage
Press plastic wrap directly onto the surface to keep it green and refrigerate up to 1 day. Scrape off any browned top layer before serving.

Whole recipe, 6 servings: about 750 calories.
Estimate from USDA FoodData Central; not medical or dietary advice. Based on 6 of 6 ingredients.
How we estimate
We add up USDA FoodData Central values for each measured ingredient as written and divide by the recipe's 6 servings, so changing the servings or units here doesn't change a serving. Brands, swaps, trimming and cooking all change the real numbers.
Not counted: Roma tomato (optional); tortilla chips (to taste or as needed).
Estimated cost
About $0.80 a serving
About $4.65 for the recipe as written (6 servings).
Estimate; prices vary by store and region. U.S. average prices for September 2026 from USDA ERS Purchase to Plate prices updated with the BLS Consumer Price Index. Priced: 5 of 6 ingredients, 100% by weight.
How we estimate
Each measured ingredient is weighed as in the nutrition estimate and priced at the U.S. average: BLS's average price where BLS publishes one, else USDA ERS's Purchase to Plate price for 2017-18 raised to September 2026 with the CPI for that food group. Whole packages, store brands, sales and regions all change the real cost: treat it as a ballpark.
- ripe avocados $4.15 ERS
- lime juice $0.25 ERS
- white onion $0.15 ERS
- jalapeño $0.10 ERS
- fresh cilantro $0.05 ERS
Not priced (no official average price we can match, so not in the total): kosher salt.
Not counted: Roma tomato, tortilla chips (optional, or to taste).
