Quesadillas · Cheese (Kid-Friendly)

Easy Cheese Quesadillas for Kids

Two ingredients, one pan and about 10 minutes. Low heat makes a crisp, golden tortilla with fully melted cheese inside, and cutting it into triangles makes it easy for little hands.

Ingredients

  • 2 flour tortillas, 8-inch
  • 1 cup cheddar cheese, or a cheddar-jack mix, shredded ≈ 113 g
    Swaps for cheddar cheese

    Instead of cheddar

    • Colby or Colby Jack: The same amount. Milder and softer, and melts very smoothly.
    • Monterey Jack: The same amount. Mild and buttery, one of the best melting cheeses.
    • Gouda or Gruyère: The same amount. Nuttier and richer; melts beautifully.

    All 4 swaps for cheddar

  • 1 tsp butter, or a little oil (optional)
    Swaps for butter

    Instead of butter

    • Plant-based butter sticks: The same amount. The closest swap.
    • Refined coconut oil: The same amount: solid when the butter is soft or cold, melted when it is melted. It is all fat, so bakes are a bit more tender and rich, with no butter flavor.
    • Vegetable oil: 3 tbsp oil for every 4 tbsp (¼ cup) melted butter. Cakes and muffins come out moister and stay soft longer, without a buttery taste.

Steps

  1. Lay the tortillas flat and sprinkle 1/2 cup cheese over one half of each.
  2. Fold each tortilla over the cheese to make a half-moon and press gently.
  3. Heat a nonstick skillet over medium-low heat. Add the butter, if using, and swirl it around.
  4. Lay both quesadillas in the pan with the folded edges in the middle.
  5. Cook until the bottoms are golden and the cheese starts to melt.
    ⏱ Side 1: 3 min
  6. Flip with a spatula and cook until the second side is golden and the cheese is completely melted.
    ⏱ Side 2: 3 min
  7. Move to a cutting board and let them cool for 1 minute so the cheese isn't molten.
    ⏱ Cool: 1 min
  8. Cut each into 3 triangles and serve with dips, if you like.

Tips

  • If the tortilla browns before the cheese melts, turn the heat down and cover the pan for a minute.
  • For a lunch box, let the wedges cool completely before packing so they don't steam and go soft.

Storage

Best fresh. Leftovers keep in the fridge 2 days; reheat in a dry skillet until hot and crisp.

Estimate from USDA FoodData Central; not medical or dietary advice. Based on 2 of 2 ingredients.

How we estimate

We add up USDA FoodData Central values for each measured ingredient as written and divide by the recipe's 2 servings, so changing the servings or units here doesn't change a serving. Brands, swaps, trimming and cooking all change the real numbers.

Not counted: butter (optional); salsa (to taste or as needed).

Estimated cost

About $1.05 a serving

About $2.15 for the recipe as written (2 servings).

Estimate; prices vary by store and region. U.S. average prices for September 2026 from BLS Average Price Data and USDA ERS Purchase to Plate prices updated with the BLS Consumer Price Index. Priced: 2 of 2 ingredients, 100% by weight.

How we estimate

Each measured ingredient is weighed as in the nutrition estimate and priced at the U.S. average: BLS's average price where BLS publishes one, else USDA ERS's Purchase to Plate price for 2017-18 raised to September 2026 with the CPI for that food group. Whole packages, store brands, sales and regions all change the real cost: treat it as a ballpark.

  • cheddar cheese $1.55 BLS
  • flour tortillas $0.60 ERS

Not counted: butter, salsa (optional, or to taste).
