Milk: what it is, how to pick and store it

Our recipes mean whole milk unless they say otherwise. Lower-fat milk works in most savory dishes, a little less rich.

How to pick it

Check the date, and pick it up last so it goes home cold.

How to store it

Keep it in the coldest part of the fridge, not the door, with the cap on. Milk can be frozen for cooking; thaw it in the fridge and shake it well (the texture changes).

Out of milk? What to use instead

  • Unsweetened soy milk: The same amount. The closest plant milk for baking: its protein helps things brown and set.
  • Unsweetened oat milk: The same amount. Creamy and mild with a hint of sweetness.
  • Unsweetened almond milk: The same amount. Thinner and less rich, so cakes are a little paler and drier.
  • Evaporated milk + water: Half evaporated milk, half water. Close to whole milk, with a slightly cooked, caramel note.
