Oregano: what it is, how to pick and store it

A Mediterranean herb. Dried oregano is stronger than fresh and is the one most of our recipes use, in tomato sauces, pizza, Greek dishes and chili.

How to pick it

Greek or Italian oregano for Mediterranean food; Mexican oregano is a different plant with a citrusy taste, good in chili and salsa. As a rule, 1 teaspoon dried stands in for 1 tablespoon fresh.

How to store it

Keep it in a closed jar away from heat, steam and light (not above the stove). Ground spices fade with time: if it smells faint, it will taste faint, so use a little more or replace it.
