Parsley: what it is, how to pick and store it

Flat-leaf (Italian) parsley has more flavor for cooking; curly parsley is milder. Both add fresh green flavor at the end.

How to pick it

Bright green, perky leaves with no yellowing or slimy patches.

How to store it

Wrap the bunch loosely in a damp paper towel, slip it into a bag and keep it in the fridge. Or trim the stems and stand them in a glass of water in the fridge with a bag loosely over the top.
