How to measure sugar

  1. Granulated: scoop or spoon, then level.
  2. Brown sugar: press it firmly into the cup; it should hold the cup's shape when turned out.
  3. Powdered sugar: spoon it in loosely and level; sift after measuring if the recipe says so (sifted first weighs less a cup).
  4. Honey and syrups: a light coat of oil in the cup lets them slide out.
