Pan size conversions
To move a recipe to a different pan, compare the pans' areas (or, for Bundt and tube pans, how much they hold), multiply every ingredient by the ratio, and keep the batter about as deep.

Scaling to a new pan
- Work out the factor: the new pan's area divided by the old one (a round pan's area is 3.14 × radius × radius). The calculator does this for any size.
- Multiply every ingredient by it. Eggs: beat them and use part of the last one.
- Keep the batter depth about the same and the oven temperature the same.
- Bake time follows depth: a thinner layer bakes faster, a deeper one slower (lower the oven 25°F and tent with foil if the top browns first). Check with the recipe's own doneness cue.
- Bundt and tube pans compare by volume; fill them about two-thirds full. Capacities here are to the rim; sloped sides hold a little less.
- Glass and ceramic heat up more slowly than metal, then hold the heat, so batter in them often takes longer to bake and the edges can overbake before the middle is done. For glass, King Arthur Baking's advice is to lower the oven 25°F and allow up to 10 minutes more. Dark metal browns the most, so watch the edges.
