How to measure flour by the cup

  1. Stir or whisk the flour in its bag or bin to loosen it.
  2. Spoon it into the measuring cup until it mounds over the top. Don't tap or shake the cup.
  3. Sweep the top level with the back of a knife.
  4. Scooping the cup straight into the bag packs flour down and can add a lot more than the recipe meant; a scale avoids the question.
