Measuring butter

  1. From a stick: cut at the wrapper's tablespoon lines.
  2. From a tub or block: press softened butter into a measuring cup with no air pockets, or weigh it.
  3. European butter often comes in 250 g blocks, about 2 ¼ sticks.
  4. Melted butter measures the same by weight; by volume it settles a little, so measure it solid when you can.
