Before you start

Gather your ingredients

  • Swaps for cheddar cheese

    Instead of cheddar

    • Colby or Colby Jack: The same amount. Milder and softer, and melts very smoothly.
    • Monterey Jack: The same amount. Mild and buttery, one of the best melting cheeses.
    • Gouda or Gruyère: The same amount. Nuttier and richer; melts beautifully.

    All 4 swaps for cheddar

  • Swaps for butter

    Instead of butter

    • Plant-based butter sticks: The same amount. The closest swap.
    • Refined coconut oil: The same amount: solid when the butter is soft or cold, melted when it is melted. It is all fat, so bakes are a bit more tender and rich, with no butter flavor.
    • Vegetable oil: 3 tbsp oil for every 4 tbsp (¼ cup) melted butter. Cakes and muffins come out moister and stay soft longer, without a buttery taste.

Step 1 of 8

Lay the tortillas flat and sprinkle 1/2 cup cheese over one half of each.

Step 2 of 8

Fold each tortilla over the cheese to make a half-moon and press gently.

Step 3 of 8

Heat a nonstick skillet over medium-low heat. Add the butter, if using, and swirl it around.

Step 4 of 8

Lay both quesadillas in the pan with the folded edges in the middle.

Step 5 of 8

Cook until the bottoms are golden and the cheese starts to melt.

Step 6 of 8

Flip with a spatula and cook until the second side is golden and the cheese is completely melted.

Step 7 of 8

Move to a cutting board and let them cool for 1 minute so the cheese isn't molten.

Step 8 of 8

Cut each into 3 triangles and serve with dips, if you like.

All done

Enjoy!
