Ceramic pie weights

Hold a blind-baked crust flat so it does not puff up or slump down the sides.

What it is and why it matters

Pie weights are small ceramic or metal beads that hold a crust flat while it bakes empty, which is called blind baking. They keep the bottom from puffing up and the sides from slumping. Dried beans on parchment do the same job.
