Bakeware

Wire cooling rack

Air underneath keeps bottoms crisp instead of soggy.

What it is and why it matters

A cooling rack is a wire grid that holds hot baked goods off the counter. Air moves underneath, so steam escapes instead of turning bottoms soggy. An oven-safe rack can also sit inside a sheet pan for roasting or oven-frying.
