Candy thermometer
Hits exact sugar stages for caramel and fudge.
What it is and why it matters
A candy thermometer clips to the side of the pot and reads high temperatures. It tells you when sugar reaches the stages that caramel, fudge and candy need, and when frying oil is hot enough. Guessing those stages is where many candy recipes go wrong.
