How to measure butter

  1. Liquids: use a clear cup on the counter and read it at eye level.
  2. Thick things (sour cream, cream cheese, peanut butter): spoon them in, press out air pockets, level, and scrape the cup clean.
  3. Butter: cut at the wrapper's tablespoon lines; a stick is 8 tablespoons.
  4. For the same result every time, weigh it: put the bowl on the scale, press tare, then add butter to the weight above.

Where the number comes from

USDA FoodData Central (public domain): Butter, salted (FDC 173410), from the food's own measured cup, tablespoon or teaspoon weight. A US cup is 236.6 ml. FDC weighs a cup of butter at 227 g; we use 2 sticks (226.8 g) so this page matches the butter wrapper.
