Ingredients

  • 12 mini bagels, split in half
  • ¾ cup marinara sauce, or pizza sauce
  • 1 ½ cups mozzarella, shredded ≈ 168 g
  • 48 mini pepperoni, or 24 regular slices cut in half (optional)
  • ½ tsp italian seasoning (optional)
    Swaps for italian seasoning

    Instead of Italian seasoning

    • Homemade blend: For 1 tsp: ½ tsp dried oregano, ¼ tsp dried basil, ¼ tsp dried thyme (a pinch of rosemary if you have it). The same thing.
    • Herbes de Provence: The same amount. Similar, often with lavender; a little more floral.
    • Dried oregano alone: The same amount. Stronger and simpler.

    More for Italian seasoning

  • 2 tbsp parmesan, grated (optional)

    Instead of parmesan

    • Pecorino Romano: The same amount. Sharper and saltier (it is made from sheep's milk), so go easy on other salt.
    • Grana Padano: The same amount. Milder and a little softer, very close otherwise.
    • Nutritional yeast: 2 tbsp for each ¼ cup grated parmesan. Nutty and cheesy, but it doesn't melt or brown.

Steps

  1. Heat the oven to 425°F (220°C).
Line (how to line a pan) Line a pan Cover the bottom (and sometimes sides) of a pan with parchment or foil so food doesn't stick and lifts out easily. 1. For a sheet pan, tear parchment the size of the pan and lay it flat.2. For a round cake pan, trace the bottom on parchment, cut the circle out and press it in.3. For brownies and bars, leave two long sides hanging over to make handles (a "sling").4. A little grease under the paper holds it in place. Done when: The paper lies flat with no folds where the batter could run under it. How to line a baking pan with parchment: mistakes to avoid

  2. Lay the bagel halves on the pan, cut side up.
  3. Toast (how to toast) Toast Heat nuts, seeds, spices or bread crumbs in a dry pan or oven until fragrant and lightly browned. 1. Spread them in a dry skillet over medium-low heat, or on a sheet pan at 350°F.2. Shake the pan or stir often.3. Watch and smell: the moment they smell nutty, they are close.4. Tip them onto a plate right away; the hot pan keeps cooking them. Done when: They are fragrant and a shade darker. Small seeds take 1 to 3 minutes; nuts in the oven 5 to 10. 4. Spread about 1 1/2 teaspoons of sauce on each half.
  5. Top each with a pinch of mozzarella, 2 mini pepperoni and a sprinkle of Italian seasoning and parmesan, if using.
  6. Bake until the cheese is melted, bubbly and starting to brown at the edges.

  7. Let them cool for 2 minutes before eating; the sauce is very hot.

Tips

  • Go light on the sauce. Too much makes them soggy.
  • Set out bowls of toppings and let kids build their own.

Storage

Refrigerate baked leftovers up to 3 days and reheat at 400°F for 5 minutes.

Make ahead

Freeze assembled, unbaked bagels on the sheet pan for 1 hour, then bag them for up to 2 months. Bake from frozen at 425°F for 10 to 12 minutes, until bubbly and hot in the center.

Cook once, eat twice: Double it (12 servings instead of 6): cook one batch and freeze the other before cooking, the way its make-ahead note says. It keeps 2 months frozen, by the make-ahead note above. Print a freezer label · More freezer meals

Estimate from USDA FoodData Central; not medical or dietary advice. Based on 3 of 3 ingredients.

How we estimate

We add up USDA FoodData Central values for each measured ingredient as written and divide by the recipe's 6 servings, so changing the servings or units here doesn't change a serving. Brands, swaps, trimming and cooking all change the real numbers.

Not counted: mini pepperoni, italian seasoning, parmesan (optional).

Estimated cost

About $0.90 a serving

About $5.35 for the recipe as written (6 servings).

Estimate; prices vary by store and region. U.S. average prices for September 2026 from USDA ERS Purchase to Plate prices updated with the BLS Consumer Price Index. Priced: 3 of 3 ingredients, 100% by weight.

How we estimate

Each measured ingredient is weighed as in the nutrition estimate and priced at the U.S. average: BLS's average price where BLS publishes one, else USDA ERS's Purchase to Plate price for 2017-18 raised to September 2026 with the CPI for that food group. Whole packages, store brands, sales and regions all change the real cost: treat it as a ballpark.

  • mini bagels $2.35 ERS
  • mozzarella $2.25 ERS
  • marinara sauce $0.80 ERS

Not counted: mini pepperoni, italian seasoning, parmesan (optional, or to taste).
