Meat mallet

Pounds cutlets to an even thickness so they cook evenly.

What it is and why it matters

A meat mallet pounds chicken breasts, pork and other cutlets to an even thickness. Even pieces cook through at the same time, so thin edges don't dry out before the thick part is done. The flat side is the one most recipes need.
