Powdered sugar: what it is, how to pick and store it

Sugar ground very fine with a little cornstarch, for frostings, glazes and dusting. Also sold as confectioners' or 10X sugar.

How to pick it

Any brand. Sift it if a frosting or glaze needs to be smooth.

How to store it

Airtight and dry; it clumps in damp air.
