Pastry blender
Cuts cold butter into flour for flaky layers.
What it is and why it matters
A pastry blender is a handle with curved blades or wires. It cuts cold butter into flour without melting it, which is what makes pie crusts, biscuits and scones flaky. Two knives or your fingertips can work too, but slower.
