How to bake in a water bath
Set a dish of custard or cheesecake in a larger pan of hot water so it bakes gently and evenly.
Step by step
- Wrap a springform pan in two layers of heavy foil so no water seeps in.
- Set the filled dish in a larger roasting pan and put both on the oven rack.
- Pour hot water into the big pan until it comes halfway up the smaller one.
- Bake as directed, then let the dish cool in the water a little before lifting it out.
How you know it's done
The edges are set and the center still jiggles a little, like set gelatin.
Common mistakes
- Pouring water in outside the oven and sloshing it while you carry the pan.
- Leaky foil, which gives a soggy crust.
