How to parboil potatoes and vegetables

Boil food until it is partly cooked, so it finishes faster another way (roasting, grilling, frying).

Step by step

  1. Cut the food into even pieces.
  2. Start potatoes in cold salted water; drop other vegetables into boiling water.
  3. Cook until the outside is tender but the center still resists a knife.
  4. Drain well and let it steam dry for a few minutes before the next step.

How you know it's done

A knife meets firmness in the middle. For roast potatoes, shake the drained pieces to rough up the edges for extra crunch.

Common mistakes

  • Cooking them all the way, so they fall apart in the next step.
  • Not drying them, which stops them browning.
