How to separate egg whites and yolks
Split eggs into whites and yolks without letting any yolk get into the whites.
Step by step
- Use cold eggs; the yolks are firmer and less likely to break.
- Set out three bowls: one to crack over, one for whites, one for yolks.
- Crack an egg on the counter, open it over the first bowl and let the white fall through your clean fingers or a separator.
- Drop the yolk in its bowl and tip the clean white into the white bowl, one egg at a time.
How you know it's done
The whites have no yellow in them. If a little yolk gets in, scoop it out with a piece of shell.
Common mistakes
- Cracking every egg straight into the whites, so one broken yolk spoils the batch.
- Cracking on the rim of the bowl, which pushes shell into the egg.
