Fresh and dried herbs

Substitutes for parsley

How to swap fresh and dried parsley, and what to use when you have neither. Parsley loses much of its flavor when dried, so dried is a backup for cooked dishes, not a garnish.

  1. In place of fresh parsley

    Dried parsley

    How much
1 tsp dried for each 1 tbsp chopped fresh (a third as much)
    How
Crumble it between your fingers and add it early, with the liquid or the onions, so it has time to soften and give up its flavor.
    What changes
Very mild; it adds color more than flavor. Skip it as a garnish.
  2. In place of dried parsley

    Fresh parsley

    How much
1 tbsp chopped fresh for each 1 tsp dried (three times as much)
    How
Add most of it near the end of cooking and a little more just before serving.
    What changes
Fresh, green and peppery; much brighter.
  3. In place of fresh parsley

    Cilantro

    How much
    The same amount
    What changes
Stronger and citrusy; suits Mexican and Asian dishes.
    Best in
    Salsas, garnishes, salads.
  4. In place of fresh parsley

    Celery leaves or chervil

    How much
    The same amount
    What changes
Celery leaves are peppery and grassy; chervil is mild with a hint of anise.
    Best in
    Garnishes, soups, salads.
